Grilled Cod with Lemon - Basil Crunch

What you will need:

  • Grilled Cod
    • 6 pieces of cod 5-6 oz (all about the same size)
    • 2 cups panko bread crumbs
    • 2 lemons zested and juiced
    • 1 cup melted butter
    • 3 tbs dried basil
    • 1 tbs kosher salt and black pepper
  • Salad Mix
    • 1 bag of mixed greens
    • 1 package of strawberries (or your favorite berry)
    • 1 red onion (thinly sliced)
    • 4 oz shaved parmesan
    • 4 oz raspberry vinaigrette


Pre-heat grill to 400 degrees and set cooking plate on grill.

Dry fish with paper towels and set aside.

Zest lemon, and squeeze juice into mixing bowl.

Add basil, salt and pepper.

Slowly whisk in butter.

Dip dry fish fillets into mixture and then roll in bread crumbs.

Arrange salad and served with fish on the side. Great combination of Sweet, Salty and Savory.
