Much A do about the Smoking Chicken

What you will need:

  • 2-3 whole chicken about 2.5-3# each
  • 1 cup kosher Salt
  • 1 container of Ribriffic Seasoning
  • ½ gallon of water
  • 1 can of beer or soda for each chicken ( this will be used as a base)

Equipment:

  • Pop or beer cans wire cones
  • Smoking chips or wood chunks to smoker

Pre heat smoker or grill to 250 degrees (important to maintain temp) Brent sells a fantastic grill that will do this for you from your phone!)

Procedure:

Remove Chicken form package and remove anything that may be inside and any extra fat from neck and rear end.

Rinse thoroughly with water and Sprinkle with kosher salt.

Let rest for 2- 30 minutes on sheet pan.

Rinse with Clean water Removing all the salt.

Sprinkle with Rib Seasoning.

Open can and force into bottom of chicken.

Place on smoker for 15-20 minutes per pound or until the internal temp is 160.

When chicken is done remove from and place in paper bag and let rest for about 20 minutes.

Remove from Bag and Shred Chicken.

Accompaniment:

Use chicken on salad (greens, tomatoes, dressing,) Quesadillas ( tortillas and cheese) in chicken salad (mayo, celery, onion) Hawaiian buns.
