What you will need:

  • Olive oil
  • 1 flank steak
  • 4 oz fresh basil
  • 2 oz thinly sliced prosciutto
  • 1 jar sun dried tomatoes (Drained)
  • 2 bulbs fresh garlic
  • 1 - 8oz bag shredded Asiago
  • Salt and Pepper
  • 1 # fresh Mozzarella
  • Aged Balsamic

Procedure:

Pre-heat grill 475 degrees.

Trim Flank steak of all fat and slice on the long side to butterfly open.

Rub inside with olive oil and sprinkle with salt and pepper.

Lay prosciutto and basil next.

Equally distribute tomatoes and garlic on top.

Beginning on long slide roll it up like a newspaper and cut into 1” thick slices.

You may want to secure just with string, skewers or toothpicks.

Place on grill and cook for about 20 minutes.

Sauce:

  • 1 can tomato sauce
  • 1 cup heavy crema
  • 3 tbs chopped garlic
  • 4 oz fresh basil chopped
  • ¼ cup asiago cheese
  • 1 tsp Kosher salt
  • 1 tsp sugar
  • 1 tsp black pepper

Directions:

Mix all ingredient together and bring to simmer stir, stir, stir and serve.

When finished remove and rest for about 5 minutes.

Lay a sliced of Mozzarella on top and finish with balsamic.
