Imagine getting all of the veggies you need for the day in just one meal.

Steph Anders said her lunch plan does just that.

Each week, she prepares eight salads for herself and her husband.

Steph uses lettuce, spinach, green onions, carrots, broccoli, celery, cherry tomatoes, green peppers, cucumber, radishes, green beans, peas, crasins, feta cheese, and pepperoni. She then tops the salads with two tablespoons of salad dressing.

Steph also packs an apple and trail mix as snacks for the day.
