2- 8 oz lobster tails
2- 8 oz beef filets
1 Portobello mushroom
4 tbs chef salt
2 bunches of Asparagus
4 oz clarified butter
1 dash vanilla
1 recipe Duchess potatoes (see below)
Spray bottle with olive oil


Pre-heat Grill to 350 degrees

Split lobster tails with scissors lengthwise and remove meat from shell and sit on rest on top of shell.

Make a few slits into meat and season with chef salt

Season both sides of steaks with chef salt

Spray Portobello with olive and season with salt and pepper

For lobster cook with indirect heat and for about 30 minutes

For steak and mushroom cook about 8 minutes on each side depending on the thickness

Melted butter and add vanilla to it

Spray asparagus with olive oil and season with Salt & Pepper, Grill about 10 minute turning every 3

Duchess Potatoes

4 Potatoes (boil until tender)

4 tbsp. butter

4 eggs

1 tbs chives

1 tbsp sour cream

1 tsp salt

Mix potatoes in kitchen aid or other mixer and add all other ingredients until incorporated

Taste and adjust seasoning

Place in Piping bag with star tip and pipe into towers

Place on grill and cook until golden brown
