December 11: Potica (Slovenian nut roll)

2 pkgs dry yeast

1 tsp. Sugar

1/4 cup warm water

Let sit till double in size.


5 cups flour

1 1/4 cup warm milk

1 stick butter softened

3 egg yolks

1/2cup sugar

2 tbs vanilla

Pinch of salt

Knead by hand 15 minutes, cover and let rise two hours.


2 1/2 pounds pecans, walnuts or the combination of both

1/2 cup sugar

1/2 cup brown sugar

1/2 tsp cinnamon

1/2 cup warm honey

3/4 cup whipping cream warmed up

Stick of butter

3 egg whites beaten stiff.

Roll out dough 24" x36" paper thin

Spread cooled filling over entire dough evenly.

Roll dough up and cut into 6 sections.

Spray foiled pans with Pam

Egg wash for top of loaves.

Bake 320 degrees 45 min or until brown and firm.
