Cocoa Chipotle Brisket Sandwiches Focaccia Bread with White Cheddar & Crab Stuffed Tomatoes

2-5# Briskets

1 Package Foccacia Buns or Bread

1 recipe Cocoa- Rub see recipe below for ingredients

8oz molasses

1 dozen Roma Tomatoes Halved and Cored

1 recipe Crab Cake Mix

1# Dubliner White Cheddar

Recipes

Cocoa Rub

Ingredients

1/4 cup sea salt

2 teaspoons unsweetened cocoa powder

1 tablespoon white sugar

3 tablespoons garlic powder

1 tablespoon onion powder

3 tablespoons ground cumin

2 tablespoons chili powder

2 tablespoons ground black pepper

Procedure

Mix all ingredients together and store in air tight container

Crab Cake

½ cup Yellow onion Small Diced

½ cup Green Pepper Small Diced

1tbs Lemon Juice

2 Eggs

1.75 cup Freshly Ground rolls

1 Tbs Salt

1.5 tsp Granulated Garlic

1 TBS Old Bay

Pinch White Pepper

2 TBS Fresh Parsley

1# Crab Meat

Procedure

Mix all ingredients together

Crab Stuffed Roma Tomatoes

Ingredients

12 roma tomatoes halved and cored

1 crab stuffing recipe

Procedure

Using a small ice cream scoop fill each tomato and lay flat on plate ready for grill.
