April 23 - “Salads on the Grill”

Grilled Flank Steak Salad with Grapefruit Vinaigrette and Herby Flatbreads

Shopping List

2# Flank Steak
1 # Arugula
1# Spinach
1# Fennel
3oz Shredded Asiago
3 Smoked Eggs (Ye Olde Butcher Shoppe makes these)
Assorted Herbs Dill, Basil, Rosemary
1.5 cups Warm Water (about 110 Degrees)
One Packet Yeast
4 cups A/P flour or Whole Wheat Flour plus some for hands
1.5 tsp Kosher Salt
1 TBS Oil
1/4 cup of freshly squeezed grapefruit juice (about half of a large grapefruit)
1/4 cup light olive oil
1 teaspoon honey
Pinch of Sea salt and Black Pepper

Recipes

Flatbread Dough

1.5 cups Warm Water (about 110 Degrees)
One Packet Yeast
4 cups A/P flour or Whole Wheat Flour plus some for hands
1.5 tsp Kosher Salt
1 TBS Oil
Cornmeal

Procedure
  • Sprinkle Yeast over Bowl of Warm Water.
  • Wait about 5 minutes
  • Mix Flour and Salt Together and Fold into Water
  •  When dough form work with hands and let sit cover in bowl for about 30 minutes
  • Smash dough and roll on Cutting Board with roller or hands
  • Recommend Indirect heat at about 375 degrees
Grapefruit Vinaigrette
  • 1/4 cup of freshly squeezed grapefruit juice (about half of a large grapefruit)
  • 1/4 cup light olive oil
  • 1 teaspoon honey
  • Pinch of Sea salt and Black Pepper
Place in Martini Shaker and Shake it dancing at a Wedding. Pour over salad ASAP or shake it again before you put it on.
