You're in for a treat.  Chef Jim and sidekick Brent Buchan are returning to KTTC - back by popular demand!  But this time, they're grilling in the morning with Dan, and their goal is to make Dan a grilling expert.  It will be fun and informative!  Look below for this week's recipes.

WEEK FOUR - "You Shot it!  Let's Eat it!"

Menu Grilled Venison Steaks with Port Wine Buerre Rouge, Green Beans and Twice Potatoes / Groceries
10# Venison steaks
3# Greens beans
Bottle Port Wine
10 Potatoes 60 count
2# butter
Pint cream
1# bacon
1# Shredded cheddar-jack cheese

WEEK THREE Sweet Tooth Sundaes & Smoked Pork Tenderloin
Menu Smoked Caramel Apple Pie a la Mode / Groceries
2 Dozen Green Apples
5# sugar
5# butter Real
5# flour
Chocolate sauce
Caramel sauce
1 quart heavy cream
2 eggs

Apple Pie Filling
6 apples peeled, cored, sliced
½ # butter
1 #cup sugar
2tbs cinnamon
In sauté pan layer butter, sugar, apples and sprinkle cinnamon on top cook for about 25 minutes until butter has cooked sugar and apples down and begun to thicken. 

Cheesecake Filling
2# cream cheese
1 cup sugar
2 eggs
 Mix well

Pie Dough Recipe    3-2-1
3 cups flour
2 cup butter 1#
1 cup ice water  
Additional flour for the surface

Menu - Texas Dry Rubbed Smoked Pork Tender Loin Sandwiches/Groceries
6# pork Tenderloin
3 Loaves French Bread
1# Shredded Lettuce
3 large Tomatoes
1 # Onions Yellow

Dry Rub Recipe
1/4 cup salt
1/2 cup brown sugar
1/2 cup chili powder
2 tbsp freshly ground black pepper
2 tbsp ground cumin
1 tbsp dry mustard
1 tsp cayenne pepper
1/2 tsp ground chipotle pepper


WEEK TWO - "Grilled Pizza Party!"
Menu - Grilled Pizza with assorted toppings

Super Easy Pizza Crust for Grilling
„h 1.5 cups warm water (about 110 Degrees)
„h One packet yeast
„h 4 cups A/P flour or whole wheat flour plus some for hands
„h 1.5 tsp kosher salt
„h 1 TBS oil
„h Cornmeal

Sprinkle yeast over bowl of warm water.
Wait about 5 minutes.
Mix flour and salt together and fold into water.
When dough forms work with hands and let sit covered in bowl for about 30 minutes.
Smash dough and roll on cutting board with roller or hands.
When dough is desired size - about 6-8 Inches - sprinkle pizza pan or peel with small amount of cornmeal.  Place pizza skin on pan and add desired toppings. Completed pizza should slide off pan and onto grill.
Recommend indirect heat at about 375 degrees.

Toppings - Italian Sausage, Hamburger, Pepperoni, Mushroom, Onions, Shallots, Peaches, Smoked Pheasant, Sun-Dried Tomatoes, Fresh Mozzarella, Fresh Basil, Shredded Mozzarella, Steak, Blue Cheese, Green Peppers

Sauces - Garlic Butter / Tomato / Alfredo

1# Italian Sausage
1# Hamburger
½# Pepperoni
Container Mushroom
2# Onions
1# Shallots
6 Fresh Peaches
½# Sun-Dried Tomatoes
2# Fresh Mozzarella or 3# Mozzarella Curd (I make my own)
½ # Fresh Basil
2# Shredded Mozzarella
1# Steak Skirt or Flank
1# Maytag Blue Cheese Crumbles Ok or Wheel
2# Green Peppers
5# Flour A/P
6 packages of dry yeast
1 quart Olive Oil
1 can Tomato Sauce
1 can Alfredo Sauce
2# Butter
½# Garlic

WEEK ONE - "Burger Madness - Ultimate Stuffed Burger"
Stuffed Burger
Chipotle Cream Cheese
Gloucester Cheese and Bacon Bits
Mushroom & Swiss Burger
Pizza Burger –Stuffing with Pizza Sauce, Mushroom and Mozzarella
The Ditka - Stuffed with Grilled Bratwurst, Beer Cheese Sauce
Black and Bleu - Stuffed with Maytag and Seasoned with Cajun Seasoning
