Finale! Pork Shoulder Cook-Off!

Slaw 
3 jicama peeled and julienne
1 red onion
¼ cup cilantro
6 cups cabbage shredded
1 red pepper julienne
1 cucumber julienne
Combine ingredients and pour dressing over and tossed until coated 

Dressing for Slaw 
1 cup lime juice
¼ cup olive oil
1 tbs crush chipotle
1 tsp ground cumin seed
1 tbs sugar
Salt & pepper to taste
Mix all ingredients together

Cocoa Chipotle Dry Rub for Pork
1 cup cocoa
¼ cup chipotle powder (or chili powder)
¼ cup sugar
2 tbs  salt
¼ cup granulated garlic
2 tbs cumin ground
2 tbs granulated onion  
Mix all together and gently

Good Dry Rub for Pork
1 cup brown sugar
¼ cup chipotle powder (or chili powder)
2 tbs salt
¼ cup granulated garlic
2 tbs cumin ground
2 tbs granulated onion  
Mix all together and gently

Cider Boys BBQ Sauce
2 cups of yellow onions diced
¼ cup garlic chopped
3 tbs butter
Cook onions in butter until slightly browned, add garlic and cook for a minute stirring
Add 2 bottle of cider boys first press
Cook until beer is almost gone or reduced

Add
6 cups ketchup
2 tbs chili powder
2 tbs cumin seeds
¼ cup molasses
Cook over low heat for about 40 minutes stirring every 10 minutes
